At Aril Estate we salt cure Californian queens because they have a high flesh to seed ration. They have an underlining sweet olive taste. Soak olives to reduce salt content as desired.
Salt curing removes bitters, whist preserving the olives and intensifying their taste. Salt cured olives are high in salt content. Soak olives in water to reduce salt content to personal taste. Once soaked olives must be eaten and cannot be stored or refrigerated for lengthy periods.
Consider adding spices like ground chilli, garlic and coriander seeds to enhance the olive flavour.
